We are a quick stop butcher shop located in down town King, NC. We pride ourselves in working with local farmers to not only showcase their products, but also make it available for everyone. We believe it is important to know where your food comes from and offer 100% transparency to our customers.

Our Founding Principles

At Mitchell's Chop Shop, each employee has very strong core beliefs that we have brought together to form our founding principles. We value our customers and want to ensure that their experience with us is not only unforgettable, but consistent with each visit.

We Are...

Squared Away

We believe that the only way to ensure food safety in our facilities is to keep ourselves organized and our work areas clean. We take measures during each step of processing to maintain an appropriate work environment as well as inspect our working areas three times a day.

Honest

We believe that honesty is the best policy. At times there might be situations where an employee does not have an answer to a question, and in that case, will defer to looking into that answer and getting back to you rather than give false information to a valued customer.

Transparent

At any Mitchell's location, we believe in having full transparency with our customers. We would never want anyone to withhold information or lie to us, and we will never do that to our customers. We have always been and will continue to be open with our customers about situations that may arise. If anyone ever has any questions about something we will always answer them with the full truth.

Authentic

Every animal that comes through our processing plant is treated with the utmost care, starting with our local farmers. Each of our farmers maintain high standards in regards to animal care to ensure great quality of life. Each animal is inspected before slaughter and approved by the USDA before we process the meat to provide it to our community.

ABOUT THE OWNERS

MEAT the Mitchells! Kristi Mitchell took ownership of Mitchell's Processing in August 2018. Shortly after, in August of 2019 her husband Carl joined her full-time due to an increased customer base. They opened Mitchell's Butchery in 2020 as a storefront for customers to have access to locally grown and processed meat. In 2024 they were approached by Adam Andrews, owner of The Mercantile Chophouse, to work together and bring local beef to King, NC. Thus, Mitchell's Chop Shop was born! Carl and Kristi Mitchell are also the owners of Mitchell's Hills and Hollers farm located in Walnut Cove, NC.

Clay Tuttle

Born and raised in Stokes County, Clay has a background in agriculture and a passion for helping his local community. He and his family raise chickens, cattle, and lamb on their farm in Tobaccoville, NC.

Megan MacDonald

is a Culinary Institute of America alumna with an Associates Degree in Baking & Pastry Arts and a Bachelors of Professional Studies in Culinary Science. Megan has been in the culinary industry since she was 16 years old but her love for food began long before that. She has a passion for the farm-to-table movement which sparked her decision to start learning the art of butchery in 2024. Before joining our team she was a Sous Chef and the Executive Pastry Chef for a high end restaurant in Florida.
